The BEST Acai Bowl
From the age of 16 through 20 I worked at smoothie businesses. One might think this is where my love of 'healthy living' developed...But when a pizza place next door starts exchanging you breadsticks for smoothie, well...
Also, did you know the majority of smoothie chains make their smoothies with sugary juice and frozen yogurt ice cream? It makes them taste oh so delicious! But it also kind of cancels out the fact that drinking a smoothie is a healthier option.
Does that mean pizza bread sticks could have been a healthier choice?!
I'd like to think so.
Hands down one of my ALL TIME favorite smoothies are Acai bowls, which are becoming quite popular.
(Let it be known that I totally like Acai Bowls before they were cool.)
But unlike so many others, I won't toss my beloved smoothie bowls to the curb when it gets popular. I won't think of it any different even though it has become quite the media whore.
No. I will love them forever. Why? Because when Acai Bowls are tomorrows news and another health craze becomes the star...I'll still be there. Just like I was for Kale.
One smoothie place I worked for used apple juice and strawberry juice with acai ice cream.
Another used almond milk, vanilla ice cream, and acai smoothie packs.
With the knowledge I have and for the love of all things healthy, I came up with is what I think the BEST Acai Bowl ever.
But seriously, what makes them so popular? Besides the looks, it's a great way to make a meal out of a smoothie. You can add fruit, crunchy granola, and a drizzle of funny and eat it all up with a spoon!
It's mad I tell you, MAD. But once you do it, you won't be able to stop thinking about it. Then before you know it, you will dream about it, and then well...
Then you will make an acai bowl i guess.
Or you will drive to the nearest juice bar and have them make it for you because most likely they will know you by name and exactly what you want. So in order to avoid that embarrassment you will have to make it at home sometimes.

The BEST Acai Bowl
Ingredients
- 1 acai smoothie packs, I found mine at Costco
- Handful of frozen strawberries and blueberries
- 1 frozen banana
- a little bit of non dairy milk-I used cashew or almond
- (opt. a little bit of apple juice)
- 1 TB. agave
- handful of ice
- Toppings:
- chopped fresh strawberries, frozen blueberries, sliced bananas, and a drizzle of honey
Instructions
- Add all smoothie ingredients into a blender and add a splash or two of liquid (milk and apple juice.) The less milk, the creamier.
- Blend until creamy.
- Add toppings to smoothie and dig in with a spoon!

Walnut Berry Protein Smoothie + Our Kitchen Before Pictures!
*Need a quick snack for your hungry littles, or even yourself? This Walnut Berry Smoothie is the perfect treat to keep those bellies full!* I've discovered over the past month that there is not only ONE but TWO places near my house that make Acai bowls. You know those smoothie bowls topped with fresh fruit, granola, and a drizzle of honey?
I've been back and forth to both locations because I don't want to embarrass myself with how many acai bowls I'm really eating. Gosh dang...They are just so good.
Unfortunately a regular bowl is just shy under TEN DOLLARS, and after 4 visits in a week your husband will start to question your insanity. I've tried to make my own acai bowl at home, especially since I used to make them in high school when I worked at a smoothie place...I'm like a pro.
But by the time I go to the grocery store to buy the acai, my kids all of the sudden act like a pack of wild kangaroos raised them, I forgot my list at home, and the store feels like it's 115 inside and I begin to sweat profusely. And then I'm pregnant, so that basically means my mind is a bowl of spaghetti.
NOW do you see husband?!?
SO, I've been trying to make my own versions at home using what I have on hand LIKE A RESPONSIBLE ADULT...and I recently found a combination that I LOVE.
Smoothies are such a staple in my household, we are basically addicted to them. They are just so quick and you can add whatever you want depending on how you are feeling.
In this case, my girls asked for a pink smoothie, so I did my best and aimed to please.
Sadly it was purple and they were pissed.
Thank goodness for Princess Sofia the First and her purple obsession!
Walnut Berry Protein Smoothie
Ingredients
- 1 c. almond milk, unsweetened
- 1/3 c. yogurt of choice, I used plain greek yogurt for more protein
- 1/4 c. frozen strawberries
- 1/4 c. frozen blueberries
- 1/4 c. frozen raspberries
- 1/4 c. frozen dark sweet cherries
- 1 heaping TB. walnuts
- 1 heaping TB. chia seeds
- 1 TB. honey
- 1/2 c. ice
Instructions
- Add all ingredients into a blender and blend until creamy.
- Serve immediately.
- Optional: Top with your favorite toppings, like fresh fruit, granola, and a drizzle of honey!
- Serves 2 littles and one mama (For a snack)

This is great as an afternoon snack, bedtime snack, or 'I just need a snack'. You can definitely make this to be like an acai bowl and top with your favorite granola, fruit, and honey! But if your like me, you forgot the granola along with the acai...

Healthy Banilla Peanut Butter Milkshake
I don't know about you guys, but this is kind of how I feel after the holidays...
Tired, chocolate all over my face, hair in a bun because I've been doing lots of "relaxing"...
It's not pretty.
I know in years past I've written out a few things I learned the previous year, and goals that I wished to accomplish the following year. But I won't do that today.
Because I'm really bad at deadlines and goals.
And because I said I was working on a breakfast e-book last May, and I hoped to have it done by the start of the school year 2014.
And It's not done. Not even close.
I actually didn't make a 'list' of goals for this year because If there is anything the year 2014 taught me it's that things happen, and plans go out the window, and most likely we won't be prepared for things to come.
How's that for motivation?
Let's cut the Debby Downer crap and say even though this was a 'harder' year for me (and maybe some of you too), I was tremendously blessed and I think I may have turned into a grown up.
Almost.
Bachelor starts Monday, so there's that.
SO whatever this year may bring, I say Bring It On! If there is ONE thing I've learned this year it's that no matter what, things will be ok and work out for the best.
Unless of coarse there really is a chocolate shortage like everyone is talking about, then by all means START FREAKING OUT!
And don't forget to drink a lot of milkshakes. Healthy ones and some not so healthy ones ;)!
- 1 large banana cut into slices and frozen
- 1 spoonful of natural peanut butter
- 2 tsp. good quality vanilla extract, or vanilla bean paste
- dash of salt
- a few splashes of non dairy milk
- Add all ingredients in a blender and blend until nice and creamy!

Footage Friday: Chocolate Greek Yogurt Popsicles
Here is the deal my friends.... I'm trying reeeeallly hard to post a Footage Friday video every friday. Buuuut, I'm also really trying to focus more on quality than quantity. So if I don't have a video up, it's most likely because I don't have anything I'm super proud of to show you!
It's because I love you guys so much ok?!
And it's also because I have two arms, and somehow have to film, make two kids happy, entertain in a video, and make it work...
I need a 3rd arm, seriously! My life would be ALOT easier :).
So today's video is a recipe for Chocolate Greek Yogurt Popsicles! Yeaaa! It's already too hot for me here in Las Vegas, and It's only going to get hotter...Remind me why I live here again?

Citrus Creamsicle Smoothie/Milkshake
There was a time when I went to Costco and bought a large sack of grapefruit because I was determined to loose 15 pounds.
I planned out my morning to where I'd eat that grapefruit cut in half and eat it with a silver spoon, and watch my metabolism kick start and burn that fat away. The very first morning I tried it, I took a bite of that grapefruit and thought...

That's disgusting.
Then I read you could sprinkle a little sugar on top to take away the tartness. So I tried that.
A sprinkle on top turned into a spoonful of sugar with each bite, and well the only thing that kick started that morning was my attention span.
Sure, most people enjoy grapefruit in the morning. It's tart but sweet, and the perfect way to start the day. I look at it as, it's like drinking straight lime juice and 13 minutes later I'm completely starving. It just doesn't work for me. But I can eat an entire watermelon and feel completely full till noon. Oddly enough, my favorite green juice taste like a grapefruit, and this new recipe I'm about to introduce has a hint of grapefruit as well. Also, this grapefruit cake most likely taste incredible...
But if there is one thing I've learned in living a healthy lifestyle, it's that food that is healthy needs a partner. Like Kale. You wouldn't eat kale plain would you? I mean some of you might, that's ok...(no it's not.) But if you massage the kale with lemon juice, salt, and pepper and then roast it, it's delicious!
Same thing goes for grapefruit. Pair it with a friendlier (and sweeter) citrus, along with the sweetness from the honey and the banana. Followed by the cream from a coconut (or greek yogurt), and next thing you know you are telling Orange Julius "Buh Bye!"
And now you have a reason to enjoy that 20 pound bag of grapefruit that you got from Costco...

Ingredients
2 grapefruits
1 orange
1/2 frozen banana
1 tsp-1 TB. raw honey
1/4 c. coconut cream(milk), or greek yogurt
ice
Instructions
Juice the citrus. Reserve 1/2 c. of the juice for the drink, and save the rest for drinking, smoothies, etc.
Add the ingredients into a blender and blend until creamy.
Sip and enjoy!

Fresh Vegetable Tropical Fruit Smoothie
With spring just around the corner bringing warmer temperatures, smoothies have finally made a way back into our daily rituals!
I've started something new with making smoothies, which has been using fresh vegetable juice as the liquid base! Green spinach smoothies are so last year...(Ignore the fact that I had one for lunch.)
I've never been a huge fan of throwing raw veggies into a blender and praying that the frozen banana will mask all the flavors, and honestly..I'm not a huge fan of fresh squeezed juice. I don't get too excited to drink kale, lemon, ginger, and beets. Am I a horrible health food blogger or what?! I do believe though that If you play around with the ingredients enough, you can make the perfect combination of a fresh vegetable juice! Like my most favorite one of all I posted a while back!
But these type of smoothies are not only for adults, I actually prefer them for my growing girls! My 18 month old is still young enough to where she can't quite chew raw veggies and when I cook them I can't always guarantee she will eat them! This is another way that I can relax just a little bit more knowing that her body isn't relying on the few foods she does love.
Because if that were the case, she'd be living off of the fishy gold fish crackers she found on the floor at Target the other day...(That's probably why she is always sick.)
Consider this smoothie as the first step of fresh veggie drinks. It's a good step in the right direction, and eventually I'll create that kale & beet juice smoothie that my kids, and yours too, will go crazy for!
- 2-3 stalks celery
- 2-3 large carrots
- 1- 1/ 1/2 apples
- Handful of frozen mango
- handful of frozen peaches
- 1/2 banana
- 1-2 TB. ground flax seeds
- 1 TB. honey
- ice (optional)
- Using a juicer, juice the celery, carrots, and apple. You need enough juice to measure 1 c. of liquid.
- Add the fresh juice to a blender, and add the rest of the ingredients.
- Blend until creamy.
- Enjoy!
The only bad thing about Spring approaching, besides allergies, is the fact that I've got to shave my legs on a regular basis. Can't get away with hiding behind leggings anymore!...

Things to get a little crazy around here on a daily basis, and I find myself falling farther and farther behind on certain things.
No, I'm not talking about how often I miss showers or don't shave my legs...You guys already know I rarely do those things.
It seems as if I have been doing a not so good job on updating this blog on necessary things...like that recipe page!
Which, I am happy to say is completely updated!! Woo Hoo!
I've also fallen really behind on emails, so if you have emailed me and really hate me...I understand.

The thought of eating vegetables can be gag-worthy to some...
But the idea of DRINKING your vegetables can sound just down right repulsive.
If you would have asked me 5 years ago to drink a green smoothie I would have laughed in your face than had nightmares for 6 months after that. They are down right scary.
Oddly enough, not only do I now eat my veggies, but I drink tons of them too. Trust me. I gots me lots a friends....(And good Engrish too...)
And if somebody asked me what is ONE thing they could do differently to adapt a healthier eating lifestyle, I would beg them to drink a green smoothie everyday. It's the one thing that I believe can have a major impact on your diet and change the way you feel.
But what exactly are the benefits of drinking green?
Improved digestive system
Better energy
Opportunity to give your body nutrients it most likely wouldn't receive on a regular basis
Being able to eat raw veggies(w/o a cup of ranch dressing on the side.)
-Weight loss
-Fight off sickness
-Sleep improvement
-Rid your body of toxins
-Essential vitamins, nutrients, and minerals
-Helps your kids (and hubby's!) get their veggies
-Fast to make AND healthy!
The list goes on and on....
But sometimes the benefits are not enough to convince somebody to drink green. Sure it's good for you, but is it really worth stomaching something that can taste so freak nastay?
That's where your wrong my friends...Because I am here to tell you I have never tried a green drink I didn't like.(And trust me...I've had my fair share of green drink varieties.) With the right ingredients, knowledge, and helpful perks, green drinks can taste more like a regular smoothie(even a dessert one) without even noticing the hint of any vegetables!
First, let's start with the veggies:
Spinach is an obvious choice when it comes to drinking greens. It's a very mild tasting green, so a lot of people love to use it. On top of that, it's a familiar ingredient. People are scared of it, but not too scared since they know a little bit about it. I think spinach is a GREAT green to add in smoothies, but I think sometimes we get stuck in a rut of ONLY using spinach. There are SO many other veggies out there that have different types of vitamins, minerals, and nutrients that our bodies need.
Here are my favorite veggies to use as of right now:
Spinach
Kale (no stems, just leaves. Stems are stanky!)
Rainbow and Green Chard
Collard Greens
Dandelion Greens (Just a little, it can tend to me strong)
Mustard Greens (just a little, it kind of has a kick.)
Cucumbers
Carrots
Beets
Avocados
Pumpkin Puree
*Remember to wash your greens to get rid of dirt and yucky stuff! (Yes, I said yucky. So professional.)
And to store greens properly, I just wash them, dry, and then put them in labeled zip lock bags with a paper towel.
Perfect for portioning sizes for smoothies and what not!
Next Step: Add your fruit!
Veggies aren't the only thing that you can add to your green drink. I especially love adding fruit!
Fruit is a great way to add a natural sweetness to your drink, giving it a 'smoothie' like taste, and hiding the taste of some of those veggies. Not too mention fruit is another great way to get in some extra goodness like antioxidants and fiber!
Here is some of my top fruits to add in smoothies. And fruit will do, it just depends on your liking. For more tropical flavors choose things like mangos, oranges, pineapples, etc...
Bananas (GREAT sweetener! Also does well hiding those veggies!)
Cherries
Strawberries
Blueberries
Blackberries
Raspberries
Mangos
Pears
Pineapples
Peaches
Orange Juice (Fresh squeezed)
Pomegranates
Grapes
Apples
Next, give that smoothie some VA VA- VOOM!
Here is where you can go above and beyond a strawberry banana smoothie, and move onto a sweet almond cherry coconut bliss smoothie. The world is your...green drink? That made no sense, but are you catching my drift? There are many little things we can add to our green drinks to give them that extra flair that will make them more desirable to drink. No one ever said no to a chocolate PB drink! And if they did, well then...I'm speechless. :-)
Here are some things to add to those green drinks to give them some extra OOMPH!
Nut Butters (Almond Butter, Peanut Butter, Walnut Butter, Sunflower Butter...etc. Great source of protein and healthy fats!)
Nuts (Don't have the butta', then just throw in a few nuts!)
Cocoa Powder (Chocolate...Heck yes!)
Carob Powder
Oatmeal (Bring on the hearty breakfast grains!)
Almond Extract
Vanilla Extract
Spices (cinnamon, nutmeg, ginger)
Mint Leaves
Basil Leaves
Coconut Milk
Orange Juice (If you combine coconut milk and Oj, you get a creamsicle taste!)
Cocoa nibs
Dark chocolate chips
PB pong balls or Fudge Balls or S'more Balls
Lemon, Lime
Ginger
Don't forget those added bonus:
Every green drink needs those few added bonuses that will boost their nutrient value even more!
Here are my favorite little added bonuses:
Protein Powder (I love to use a plant based protein powder. My favorite brand is Sun Warrior!)
Choice of Liquid (whether it be non dairy milk, reg. milk, water, etc.)
Lastly if needed, add a sweetener.
I've gotten to the point where I don't usually need a sweetener, especially if I have loaded it with fruit. But the more stronger tasting veggies like beets, I tend to add a little bit to sweeten the drink to my liking.
Here are my favorite go-to natural sweeteners:
100% Pure Maple Syrup
Agave Nectar
Raw Honey
Dates
Stevia
So where to begin?
Start simple. Add ingredients you are familiar with, and slowly each time add in different things to get used to. You will adjust smoothies to your taste buds preferences, and in time find what is right for you!
Here are a few recipes to get you started!
Beginners Green Drink
1 C. non diary milk
2 C. spinach
1 frozen banana
1 TB. Chia Seeds
1 tsp. Sweetener of choice
1tsp. vanilla
Ice
Optional: Peanut Butter
Tropical Cream Green Drink
1/2 C. fresh OJ
1/2 C.-1 C. coconut milk
1 C. spinach
1 C. kale
1 frozen banana
1/2 c. frozen pineapple, mango, or peaches
1 tsp. vanilla
2 TB. coconut flakes
ice
Red Velvet Smoothie
1 C. non dairy milk
1 medium beet peeled, steamed, and chopped
1/3 c. frozen raspberries, cherries, or strawberries
1 frozen banana
4 TB. cocoa powder
4 pitted dates
1 TB. chia seeds
2 tsp. sweetener of choice
1 tsp. vanilla
ice

Green Smoothies are great for breakfast! Baby Boo has one pretty much every morning, it's her favorite thing to have!
Here is a typical smoothie for Boo. It's loaded with healthy fats, protein, greens, and tons of vitamins and minerals!!
Princess Bliss Avocado Green Smoothie
1 C. milk of choice (I used coconut-from a carton, not a can.)
1 frozen banana
1/2 frozen avocado
1/2 c. kale
1/4 c. oats
1/4 c. vanilla yogurt (soy or reg.)
1 TB. Chia seeds
1 TB. almond butter
1 tsp. vanilla
1 TB. maple syrup (Boo really doesn't need a sweetener because she can't tell the difference, but for older kids you could add a little more than 1 TB.)

Then this morning for breakfast the three of us split this smoothie:
My husband said it was the BEST smoothie he has ever had...And trust me, those words don't always come out of his mouth...

Chocolatey Chocolate Green Smoothie
1 c. milk of choice
handful spinach
handful kale
handful chard
1/4 c. dandelion greens (just the leaves)
1 frozen banana
handful frozen cherries
4 spoonfuls cocoa powder
2 TB. almond butter
1 TB. chia seeds
2 TB. agave nectar
2 c. ice
A lot of times I make more than enough smoothie, so I just freeze the extra in an ice cube tray and use them for another day! That way, when I am in a hurry I just throw some in a blender with some milk and voila!
Whew! That was a LONG post! Don't be afraid to try a green drink! If anything, you won't regret the way it will make you feel on a regular basis. :-)

Lemon Quinoa Cilantro Chickpea Salad AND Everything Green Smoothie
Lemon Quinoa Cilantro Chickpea Salad
Ingredients
1/2 c. dry quinoa
1 1/2 c. vegetable broth
(OR 1 c. prepared/cooked quinoa)
1 c. garbanzo beans, drained and rinsed
1 c. cherry tomatoes, halved
1/4 diced onions
3 cloves garlic, chopped
2 avocados, diced
1 bunch cilantro, bottom stems cut off
2 c. spinach
(dressing)
2 tsp. dijon mustard or plain mustard
zest of 1 lemon
Juice of 1 juicy lemon, or two not so juicy lemons :)
2 tsp. olive oil
1 tsp. honey
1/2 tsp. cumin
salt and pepper
Instructions
Prepare quinoa by adding quinoa and broth to a pot. Cook on medium/high until it begins to boil. Reduce heat to low, cover and simmer for 10-15 minutes until quinoa has cooked fully.
Once the quinoa is cooked, set it aside to cool.
In a food processor, add cilantro and spinach. Process the greens until they are chopped up finely.
In a bowl, add the chickpeas, chopped greens, tomatoes, avocado, onion, garlic, and cooled quinoa.
In a bowl, whisk the dressing ingredients together. Pour over the salad. Mix it together.
Add salt and pepper to taste.
Let sit in the fridge until ready to eat! Enjoy!
Everything Green Smoothie
Serves:
2-3
*This smoothie makes quite a bit and could easily serve two adults. Unless your like me and can eat for two, then you could drink it all on it's own. It could also serve 2-3 kids, one mama and 2 children...etc.. :-)
Ingredients
1 c. non dairy milk, more if needed for thinning out smoothie
handful of fresh spinach
handful of fresh kale, no stems
handful of swiss chard
2 green apple, cold and cit into slices/core removed
1/2 medium cold cucumber
1 frozen banana, sliced
1 TB. chia seeds
sweetener of choice, stevia is what I used/honey works well too (1-2 tsp.)
1 1/2 c. ice
Instructions
Add all ingredients to a blender and blend until creamy. Drink immediately. Enjoy!
Pumpkin Spice Cashew Cream Frosting & Pea Smoothie
Ghost, goblins, and scary things alike,
All come out on Halloween night.
Trick or Treaters/Candy Eaters dress up with delight,
Hoping for buckets packed full of those sugary bites.
While kids dress like vampires, super heroes and fairys,
Mom n' Dad's have their costumes that are morbidly embarrassing.
We love the idea of dressing up as someone your not,
and eating one's weight in candy 'til your teeth rot...
You see it's a fun holiday, but there are healthier ways to enjoy.
Once you know what I mean, you will scream n' shout, "Oh Boy!!"
Start the morning off right with a drink green that's scary...
With out spinach or kale, how it's green, that's quite weary?
Peppermint P(e)atty Green Drink
1. non dairy milk, 2 C. frozen peas, 1 large banana(or two small), 6 dates, 2 TB coconut, 2 TB. chia seeds or ground flax, ice
optional: mint leaves/peppermint extract, cocoa nibs.
Next don't forget to stuff your crockpot with goodies,
Chili on Halloween night is a must for you my dearies.
Make sure it's veggie packed, as well as delicious.
Cornbread with butter is best! It's Fab-U-Licious!
Don't forget to spend the day dancing around,
Shakin' your booty in that tutu ...Drop it to the ground!
Then when it comes to that time to get all dressed and pretty,
Don't forget to be safe, look both ways, and avoid all the iffy's.
When you get home check that candy, for some you must beware.
But save all those M&M's, those you must not share! (only with me.)
Although I must say the candy is just ok,
Especially when compared to that frosted donut in my face.
The frosting is to die for,
it's different but delicious...
One taste and you will want more,
but only if you do the dishes!
Pumpkin Spice Cashew Cream Frosting
Ingredients:
1 C. cashews (soak in water before, for about 30 minutes.)
1/4 C. non dairy milk
4 TB. pumpkin puree
1 tsp. cinnamon
1/4 tsp. nutmeg
3 TB. Pure Maple Syrup
Directions:
1. Blend all ingredients in a food processor (cashews only-not the water it was soaked in), and puree until smooth and creamy.
2. Dip hand in processor(while blade is turned off!!) and then lick hand like a dog.
No teeth rotting or tummy aches are to be had with this frosting.
Just happy faces and well treated bodies, oh a mouth full with "fosthingpsh."
But if your kids/your hubbys are like, "what they fugdsicle?! Cashews for dessert?!"
Simple don't tell them before hand, or tell them, "Be quiet, you twerp!"
No, okay...Let's not do that, it would be totally mean...
Simply disguise that dear frosting, so the cashews are unseen! :-)

Coconut Vanilla Chai Milkshake
A lot of people ask me what I do during the day as a stay at home mom.
For starters, I appreciate you asking me and not my husband, because according to him I'm relaxing.. :)
Which is funny because this morning at 530 a.m., I spent a good 30 minutes washing a Baby from an unpleasant diaper change, all the while Mr. Know It All is snuggled up cozy in a warm bed snoozing away...
And I don't know if you heard that first part..
530 a.m.
For a while Baby Boo woke up a little after seven, but then decided that there just needed to be more time in the day to play, so recently it's been 530.
I guess 530 wouldn't be so bad, if I went to bed at a decent time and didn't stay up to watch Monday's episode of the bachelorette. (Any one else find the cellular phone salesman a little QT) Don't worry, my husband doesn't mind, he's sleeping.
It's been somewhat of a struggle for me to switch from Ari mode to Mom mode, and things that amuse me, really don't amuse Baby Boo. (She's not all that into Cell Phone Guy..)
But somehow we manage, and some days I look at the clock and say, it's ONLY 11! And other days Hubby comes home and I'm still in my PJ's, Baby Boo is nakie, and I am far from what you would call Pleasant smelling.
On the other hand, this little one masked any smell that may have come her way with a sweet scent of cinnamon.
The Cinnamon Challenge was so 6 months ago for Baby Boo.
She clearly finds joy eating it straight out of the Bottle.
Don't even try and take it away from her.
You will pay the price.
Roughly 5 bucks, because that's how much it's gonna cost to buy more cinnamon once it's spilled all over the floor in a tantrum rage to retrieve it back.
Luckily for me I had used the cinnamon for my breakfast prior to the Ms. Cinnabuns craving.
Coconut Vanilla Chai Milkshake
Inspired by the Amazing/Talented/Beautiful Mama Pea: Coconut Chai
1/2 C. Coconut Milk
1 frozen Banana
6 Coconut Milk ice cubs
1 tsp. Ginger
1 tsp. Cinnamon
1/2 tsp. Nutmeg
1/2 tsp. Pumpkin Spice (or Allspice)
1 TB Vanilla
Directions:
Blend all ingredients in a blender until creamy. Reduce milk for a creamier shake, and add milk for a less thick shake.

{Lightened Up} Carrot Cake Milkshakes
*This post was written in 2011! I’ve updated the recipe and removed a lot of the story-telling :).
A lot of times when the weather starts to warm up my girls and I crave milkshakes! I would never pass up a freshly made strawberry milkshake made from a local ice cream shop, but sometimes we have to limit the amount we have per week :).
This milkshake still contains ALL the creaminess, but it’s lightened up and naturally sweetened!
I think my favorite part is the whipped topping made with Coconut Cream! We had a lot of leftover cream so the girls and I dipped fresh berries in it alongside the milkshakes. Such a yummy treat!
Ingredients:
{For the milkshakes}
1 frozen banana, sliced
1 cup non dairy milk, frozen into ice cubes
2 TB. non dairy milk, or more if needed to blend
1/4 cup chopped carrots
2 pitted dates
1 tsp. vanilla
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. ground cloves
1/2 cup ice cubes
{For the whipped topping}
1 can refrigerated coconut milk, full fat
2 -3 TB. pure maple syrup
Directions:
{For the Milkshake}
Add all ingredients into a blender and puree until smooth and creamy!
{For the whipped topping}
Open the bottom of the can and remove all the solid cream, NONE of the liquid. In a bowl, add the cream with the syrup and beat until fluffy, for 5 minutes. Top the milkshake with the cream and enjoy! {There will be leftover cream, which is definitely ok! You can dip berries in it!}
